Holiday Recipe:
Pink Pepper Choco Tart

Ingredients |

Biscuit Base
300g digestive biscuits
90g melted butter
15g cocoa powder

Chocolate Filling
200g 80% dark chocolate
170g heavy cream
Pink peppercorns, to taste
1 teaspoon sugar Yuzu zest or orange zest (candied is also fine)
50g milk
A splash of orange liqueur (optional)

Method |


01    Crush the digestive biscuits and mix with cocoa powder. Add the melted butter and gently stir until crumbly. It doesn’t need to be evenly combined.

02    Heat the heavy cream with pink peppercorns, zest, sugar, and milk until just about to boil (around 80°C).

03     Remove from heat. Pour the hot cream mixture over the chocolate. Let it sit for 1 minute, then slowly stir until smooth and glossy.

04     Add the orange liqueur if using. Pour the chocolate filling into any mold you like.

This is an upside-down tart: add the chocolate first, then gently place the biscuit base on top. Freeze until set for easier unmolding.
